Peychaud's Aromatic Cocktail Bitters It was sometime between 1849 and 1857 when these renowned cocktail bitters were first produced. They were named after their creator (Antoine Amédée Peychaud), who was a Creole apothecary from Haiti (then known as Saint-Domingue). Like a number of other well known cocktail bitters, these are gentian based (giving the bitterness). However what sets Peychaud's apart is their predominant anise aroma, which is combined with a background of mint. Produced in the Buffalo Trace Distillery (famed for creating Bourbon Whiskey) and distributed by the American Sazerac company, it should come as no surprise that they are a definitive component of the Sazerac cocktail. On the nose this is spicy, with strong loquorice, cloves and cassia bark. On the palate these bring morello cherries, star anise and nutmeg, as well as the hint of mint. These are rich, and dark and packed full of complex flavours. They finish with a powerful git of exotic spice flavours. Perfect Serve These are the perfect 'all-rounder' to have in your cocktail cabinet, and can be used in any drink which uses bitters. However these really come into their own in a Sazerac cocktail.
